Oatmeal Stawberry Muffins


1 1/4 cup bread flour
1 cup quick oats
1/2 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 egg white
3/4 cup skim milk
1/4 cup Smart Balance oil
1 1/2 cup strawberries, sliced
1 Tbsp sugar (topping)
1/2 tsp cinnamon (topping)


Combine dry ingredients in large bowl. Add egg white and milk. Stir.

Fold in strawberries. Distribute batter evenly in 12 muffin cups that have been sprayed with nonstick cooking spray.

Combine cinnamon and sugar for topping. Sprinkle evenly on each muffin.

Bake at 400 for 15-20 minutes.
